My family did the same thing for my mom's 60th birthday (except that I let my in-laws tag along, just so that they don't complain later). We just stayed in Oahu - we were a group of 6 people and thought it would be too much trouble to hop between the islands. We stayed at Embassy Waikiki and and if you get a two bedroom two bath suite (one bedroom with a king bed and the other with two queen beds), that should be perfect for your family. They have breakfast buffet that has rice, miso soup along with omelet station and other warm/cold breakfast items including pastries. It was a huge saving for us since food was not cheap in HI. It's very close to the beach and close to many other hotels and shopping centers so we were very happy. The magic show above sounds really fun, wish we knew about it. We went to a luau but it wasn't mind blowing but much cheaper than PCC (a lot of people complain that they overcharge and the show is not authentic - all performers are students of BYU.
